What is the recc'd setup for zuikaku and gameplay. Just would like to know since I'll be playing it in a lvl

Well FB is the standard fare.
5-6 fighters and 2-3 bombers + seaman or other support.

I would also like to know where the zuikaku stands in terms of all the PVC and if its faster to lvl to 120 in this compared to SY

Well CV exp is generally worse than BB but more stable so the average should be more or less the same.
Also when leveling on a PCV you can level the entire CV6 crew in one go unlike leveling tem on a BB where you either immensly gimp yourself or level 2 pilots at most.

As for the PCV... 

It's the highest level PCV so you suffer a lesser exp penatly when closing to lvl 120
It also has the largest planespace (12000) tied with MN (12020).
It's also pretty slim and since PCVs have a ton of turning force it has a easier time avoiding bombs and torps.

IJN Has one of the worst fighters for CV so FW'ing isnt gonna work unless you have really good fighters.
Set-up should be 2-3 Fighters and rest are DBs. Bombing CVs first in GBs should be your priority. Only send fighters if you need to scout a certain region, Escort your DBs or fend of Fighter Whores. 

It wouldn't be Ideal for BB crew lvling unless you only need to level 2-3 sailors for amagi. 

Do your best to avoid fighter combat unless you know for sure you can take out the figthers without taking too much of a loss. Taking out scouts and Taking down enemy CVs as I said should be your top priority and bombing other ships should come later.

Remeber that you aren't a God like a Tico, so you aren't going to win most fighter engagements. You only scout for your team if your BBs are getting fighter camped.

Does anyone know if the zuikaku is a CV 5.5 or what? also how many sailors can it hold aboard? I'm assuming 1 BO, 2x gunners and it says 9 support slots.. so a total of 12 sailors right?

You can think of it as a 5.5 in that it's clearly above a 5, but well below a 6. And yes, it has 12 total crew, up to 8 pilots, BO, 2 gunner, and 1 extra support.
