What I know roughly is that the NoCar has the better guns; longer range, higher damage, slightly better reload, but they're 45 degrees so the hang time is longer making them a little harder to hit with, but providing better AP. If angle doesn't matter to you, they're definitely the better guns. Personally I consider it another plus that the following Iowa and Monty both also use 45 degree guns, so it helps you acclimate to using the angle. The Nocar can use the Sodak guns if you wish, the reverse is not true. The Nocar is fairly average in speed, largish for a BB3 and slightly better DP.
The Sodak is very close in range and damage, but not as much as the Nocar. However, it's 40 degree guns are slight more manageable. Both the Nocar and Sodak suffer terrible spread, even with the best gunners, so the lower angle can be helpful. The Sodak makes up for its slight armament disadvantage with greater speed, marginally better APHC, smaller size and high AAW. The 8 T slots makes for pretty unimpressive AA cover, compared to the 10 slots of the Nocar which is just about enough to justify using AA imo if you have such gunners.
