Do you actually use all 3 monitors? At work I use a dual display and that gets annoying due to the spacing(borders) of the monitors.
I mainly use them for multitasking if I am honest; Its invaluable for coursework and revision being able to have multiple things up at once. As well as modern games that support borderless windowed.
I keep meaning to try some games in Eyefinity; Ive tried eve as you can see, and it looks awesome. Although we all know eve is about duel/tri/quad boxing! I want to try F1-2010 with eyefinity (not got 2011 yet, waiting for a steam deal). Apparently BF3 is pretty awesome with it, but not buying it due to EA/Origin. I don't think TF2 supports it, but I could be wrong.
Its a pain for Navyfield. It displays on my centre monitor fine, but messes up the other ones; However, in that case, I switch the right hand monitor to my LANBox, and my left monitor to my MacbookPro. I have a program called Synergy which links my main keyboard and mouse to both computers so it works like one PC.
For fleet league refereeing, I tend to run my macbook for web based stuff, My middle monitor on my main PC with Bravo team refereeing, and the right hand monitor with alpha team. This makes spotting desyncs easy, and you can see fighter whored based desyncs far easier.
